Whole Wheat Banana Pankakes

“Maybe we can sleep in // Make you banana pancakes // Pretend like it’s the weekend now.”

Inspired by Jack Johnson’s song, “Banana Pancakes”, these will make any weekend morning extra special. In fact, this is our go-to Father’s Day Recipe.


Ingredients:

1/2 cup whole wheat flour
1/2 cup all purpose flour
2 tsp. baking powder
1/2 tsp. kosher salt
1 pinch freshly ground nutmeg
2 very ripe bananas
1 tbsp. brown sugar
2/3 cup skim milk (+ a little extra if batter is too thick)
1 tbsp. vegetable oil
1 tsp. vanilla
1 large egg

Steps:

Mix first five dry ingredients together and set aside. In a mixer, mash together bananas, sugar, milk, oil, vanilla, and egg. Slowly add dry ingredients to wet and mix just until blended.

Heat non-stick pan on medium heat. Pour 1/4 cup of pancake mixture into medallion shapes and let cook for a few minutes until bubbles begin to form on surface. Flip pancakes and cook for about 2 more minutes.

This makes enough for a family of four, but if you have extra, you can freeze pancakes in freezer bag, placed between sheets of parchment paper.
