These Pumpkin Puffs are irresistible and a healthy alternative to the standard muffin. My son could not wait to get his hands on them...that's him not waiting until the picture was taken!
1 can pumpkin puree
1 box of spice cake
Preheat oven to 350 degrees. Coat 2 mini cupcake tins with cooking spray and set aside.
Combine one box of spice cake mix and a 14 oz. can of pure pumpkin puree. (Make sure that's it's not the pumpkin pie mixture...look for 100% pure pumpkin.) Mix thoroughly. Be patient - it can take a few minutes to get all the lumps out.
Fill a pastry bag or plastic storage bag with mixture. If you are using a plastic storage bag, cut the corner tip off, about 1/4 inch. Squeeze mixture through bag, filling each cup to the top. The mixture will not rise very much in the oven; it keeps the same shape as its raw form.
Bake for about 12 minutes, cool, and eat!!
