We use healthy, lean pork tenderloin instead of chops and cook it all together in a slow cooker. It couldn’t be easier.
Ingredients:
Pork tenderloin (organic), cut into cubes
1 large sweet potato
2 medium apples (golden delicious recommended for their mild sweet, apple flavor)
2-3 cups of water
Steps:
Peel and dice sweet potatoes into 1 inch pieces. Peel and core apple; dice into 1 inch pieces. Put apple, sweet potato and cubed pork into slow cooker and add water, just until ingredients are submerged in liquid.
Cook on low heat for about 5 hours until pork is well done. Let cool. Add all three ingredients plus some of the cooking liquid to food processor and blend until smooth.
Distribute mixture evenly amongst ice cube trays or cupcake tins, dependent upon desired portion size.

I added a 3 apples and used a rather large tenderloin so I think that is why I used over 3 cups of water. I let this sit on low from 12:30-6:30 and it was so tender and good. Since my son is eating finger food I just broke apart the pork and it was an awesome meal! I had mine over noodles. Can't wait for the leftovers tonight

My little boy loves this dish ever since he was just 9 months and still does now at 16 months! I used a blender to make it easier for him to eat.
