Confetti Pasta

A Recipe for 9-12 Months

Ingredients:

2 cups small whole grain pasta
1 Tbsp. extra virgin olive oil
1 medium zucchini
2 small yellow squash
1 small onion
1 medium carrot, grated
¼ cup parmesan cheese
Fresh parsley, finely chopped

Steps:

Cook pasta in boiling water according to package instructions, about 5-6 minutes. Drain and set aside.

Dice onion, carrot, zucchini, and squash into small ¼ inch cubes (like confetti). Heat olive oil in sauté pan on medium heat. Add onion and carrot; cook until onions are translucent. Add zucchini and squash. Cook for 4-5 minutes. Remove from heat and add parsley.

In large bowl, combine pasta, vegetable mixture and Parmesan cheese. Chop coarsely in food processor if necessary, or serve as is. Disperse evenly in ice cube trays (for babies) or cupcake tins (for toddlers) and freeze.
