Black Bean & Corn Burger

This is an excellent meat replacement because it incorporates proteins from the black beans and eggs, and whole grains from the brown rice and corn. And it's delicious...something the whole family will enjoy!


Ingredients:

2-1/2 cups cooked black beans, drained
1 cup cooked brown rice
1/2 cup cooked yellow corn
2 cloves minced fresh garlic
2 eggs
1/2 cup panko bread crumbs
2 tbsp. mild chili powder
1 tbsp. cumin
2 tsp. kosher salt
Extra virgin olive oil

Steps:

In a food processor, combine all ingredients. Blend until almost smooth...you'll want to keep a little bit of the texture from the black beans and corn. If the mixture seems too wet or sticky, add a some more bread crumbs.

Form into 6 patties and refrigerate for about 20 minutes.

Coat frying pan/skillet in olive oil, enough to cover the entire surface of the pan. When pan is nice and hot, carefully place burger patty. Do not move for about 5-6 minutes, until the patty has formed a nice crust on the bottom. (If you flip too quickly, the burger will break apart.) Once a crust forms, flip burger patty and cook the other side for about 5-6 minutes.

Top your burger with whatever you like. In the summertime, I like to decorate the bun with colorful tomatoes from our garden, and a healthy layer of fresh spinach.
