Basic Cheese Sauce
A Recipe for 12-18 Months

This sauce can be used in a number of ways. Add to steamed broccoli, cauliflower, cooked macaroni, or potatoes, for example. It’s much simpler to prepare than you might think…and with no added preservatives or trans fats, it sure beats the standard processed cheese!
4 Tbsp. unsalted butter
1/4 cup All-Purpose Flour
2 cups milk, warmed
2 cups grated mild cheddar cheese
Pinch freshly grated nutmeg (optional)
Melt butter over medium-low heat in a saucepan. Add the flour little by little and whisk constantly to prevent lumps. Cook flour and butter mixture for about 3 minutes on low heat, but do not let brown. Remove from heat and slowly add milk; mix with whisk until well combined. Return to medium heat and cook for about 5 minutes until the sauce is thick and coats the back of a spoon. Add nutmeg and grated cheese; stir until cheese is completely melted and sauce is smooth.
